Salad Secrets with Florette - Dressings Month

This month, Florette challenged me to get creative with dressings. Dressings sometimes get a bad reputation - Daily Mail-esque horror headlines may make you think that they are evil and add 10,000 calories to an otherwise healthy salad but dressings are not to be feared. Dressing your salad is a great way to add healthy fats, flavour and even additional health benefits. My box of dressings arrived as I was running around packing for my holiday so I got thinking about how to make quick, easy and well-dressed salads. Perfect for short notice dinner guests or for when you're feeling lazy but still want to eat something delicious.

Step aside dull dressings - mustard, dukkkah, goji seed mix, dried strawberries and balsamic vinegar to get creative with. Seeds are a great way to add crunch, texture and healthy fats to a salad - dressings don't just have to be poured on, think about adding crushed nuts, spices and dried fruit to mix things up.

Perfect for a main meal (toasted pitta bread would be great on the side to make it more filling) - this salad is full of flavour and takes five minutes to throw together. I was inspired by the dukkah mix to make something middle-eastern inspired and the deli aisle at Waitrose had all the ingredients I needed. You could roast your own veg but when there's a holiday to pack for...cheat!

For the salad:

Half a bag of Florette Peppery Crispy per person
Handful of mini olives
Roasted vegetables (I used a pre-bought mix of peppers, courgette and artichoke and used half the pack but any roasted veg would work)
Handful of sun-dried tomatoes
Half a pack of feta cheese

For the dressing:

1 teaspoon mustard
Balsamic vinegar
1 teaspoon dukkah spice mix

Just combine the salad ingredients in a large bowl, crumbling the feta over the top. Mix the mustard and the balsamic vinegar in a small bowl (I like mine very mustard-y but play around with the quantities depending on your own tastes), pour over and sprinkle with the dukkah mix.

The second salad is a quick and easy side dish. Full of flavour and goodness - and only one fresh ingredient so perfect for whipping up last minute! As summer ends, dried strawberries are a great alternative to fresh ones and are chewier so add more texture to a salad. I love eating fresh strawberries on their own with balsamic vinegar and the dried ones work just as well.


1 pack Florette Baby Kale (enough to serve four as a side)
Handful of dried strawberries
1 tablespoon goji berry and seed mix


Balsamic vinegar

Throw the kale into a hot pan and wilt for one minute to make the leaves softer. You can also "massage" kale but that sounds a lot more time consuming. Sprinkle over the dried strawberries and seed mix and dress with balsamic. A perfect side for serving with pasta as part of a super-quick and easy dinner.
